Granite earns that role for reasons any metrology engineer knows. Its thermal expansion is roughly half that of steel and a quarter of aluminum, so a base that changes temperature with the shop floor changes geometry far less than a metal one would. Formed over thousands of years, the stone is free of the internal tensions that make cast or welded structures drift. And a properly lapped granite surface is pore-free and wear-free - the ideal substrate for air bearings.
The manufacturing problem is that these properties are useless unless the geometry is actually achieved. A 50-ton block does not forgive mistakes. It cannot be re-poured or re-welded. It has to be right the first time.
